Taco Salad



Taco Salad

1 lb ground beef or chuck
1 pkg. Taco seasoning
1 pkg. Large flour tortilla shells
Lettuce
Cheese
Tomatoes


Brown your ground beef and follow instructions on taco packet. Now using a bowl that is oven safe place one flour tortilla shell down in it. Crumble up some foil and place in bottom of shell to help it hold it shape. Bake in oven for about 15 to 20 minutes. Depends on how crispy you want your shell. Now when shell is done let cool for about 30 minutes. Fill bottom with lettuce then add taco meat to on top. Then dress your salad with the topping you wish to put on it. You can use Thousand Island dressing or just use sour cream or taco sauce. Fix how you want it.

Tuna Salad



Tuna Salad

1 can Tuna, drained
Onion, chopped (handful)
Celery, chopped (handful)
1/2 to 1 tsp. fresh Parsley, chopped (or dried)
1 to 2 Tbsp. pickle relish (or to your taste)


1/4 to 1/3 cup Mayo/Mircle whip (or to your taste)
1 Tbsp. Chipotle Mayo (Add to your taste)
Salt & Pepper (to taste)


Mix all your ingredients except for last 3. Add those last. You don't want it runny. It needs to be a little pasty. Once all mixed serve in pita pockets, toasted bread, buns, or on salad greens. This recipe can be made in larger qauntities just add to your taste with making double batches or larger.

Grilled Cheese and Tomato Sandwich

2 slices of bread of choice
1-2 slices of cheese
1-2 slices of tomato
Mayo


Assembly your sandwich. I use 2 slices of cheese so it holds the tomato in place. One on top and one bottom. Have skillet heat on medium heat and spread mayo on one slice of bread. Place the mayo side down in skillet. Spread more mayo on the other side while other side is browning. When that side is browned flip and let the other side brown. Then remove from skillet and enjoy.


You can add your favorite herbs to the sandwich also. I like using basil and rosemary. You can also add a couple of rings of onion also if you like. If you like wilted lettuce you could add some romaine to also. Many things you can do with this sandwich. Serve with chips, fruit, raw veggies, yogurt or anything you like.


Note:
You don't need to add any oil or butter to pan. The mayo on the outside of the bread acts as the oil. Less fattening.

Panini Sandwich



Panini Sandwich


Gather the lunch meat and cheese you wish to use on your sandwich. Choose your bread type.

I used my George Forman grill to heat up my lunch meat and layer it on my bread.
I used smoked ham and smoked turkey
Provolone Cheese
Bread from bakery.
Mayo
Lettuce
Pickles

I first put my mayo on the bread. Then I start layering my lunch meat and cheese. I then put my sandwich in the George Forman grill to press it down like a panini. After I have the marks and my bread is warm I take it off and add my lettuce and pickles. Then your ready to eat.

You can put whatever you like on this sandwich. Tomato, peppers, pepper rings and so on. Enjoy and have fun making your own Panini sandwich.

McRib Sandwich



McRib Sandwich 

1 encore rib dinner (family size usually 6 ct)

1 pkg. Hoagie buns
Pickles
Onions


Cook your encore ribs according to the box directions. When done place one rib on hoagie bun dress with onions and pickles. Wrap in foil and bake for about 20 minutes. Take them out and you have a McRib sandwich.


You can add or leave stuff off of the sandwich its your taste play around with it.

Granola Bars



Granola Bars

2 cups Rolled Oats
3/4 cup light brown sugar
1/2 cup wheat germ (I used ground flaxseed)
3/4 tsp cinnamon
1 cup all purpose flour (I used gluten free)
3/4 cup raisins, (I used dried cranberries)
3/4 tsp salt
1/2 cup honey (I used vanilla agave)
1 egg, beaten
1/2 cup vegetable oil (I used Olive Oil)
2 tsp Vanilla

1. Preheat oven to 350 degrees. Grease baking dish with cooking spray. (I used parchment paper).
2. In a bowl, add in the rolled oats, light brown sugar, wheat germ, powdered cinnamon, all purpose flour, raisins and a dash of salt. Mix well.
3. Add in the honey, beaten egg, vegetable oil and vanilla. Stir and mix well.
4. Press the mix into the baking dish.
5. Place in oven and bake for 30 to 35 minutes or until golden around the edges.
6. Remove and cool 5 minutes.
7. Slice into bars and serve.

Note.. I also used about 1/2 cup of a trail mix. (Hunter Brand from Sams) I let mine cool a little long then 5 minutes before slicing. Once they are cooled i wrapped them individually in freezer paper. Or you can use anything you like. Stored in a rubbermaid container. 

Stir-Fry Lettuce Wraps

Meat of choice or Vegetable
1 red bell pepper
1 yellow bell pepper
1 medium onion
Rice (make to amount needed)
Chow Mein Noodles
Olive Oil (for sauteing)
Teriyaki sauce
Lettuce
(Use lettuce that is more like bowls. Like bibb, boston bibb.)

Fruit Sandwich

2 slices of bread
Cream Cheese
Jam, preserves, or jelly
Mixed berries

On one slice of bread spread your cream cheese and place your berries on that side. On the other side spread your jam, preserves or jelly. Put them together and you have a fruit sandwich.

Ingredients

  • Preheat oven to 350 and spray a 9 x 13 baking pan with cooking spray.
  • In a skillet over medium heat, cook the beef/turkey until no longer pink. Drain fat.
  • Add in the ketchup, water, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder, and salt.
  • Simmer for about 5 minutes.
  • Remove from heat.
  • Pour meat mixture into a medium bowl.
  • Add the quartered biscuits to the bowl and toss until thoroughly combined.
    • Pour biscuit/meat mixture into prepared baking pan.
    • Sprinkle cheese on top evenly.
    • Place pan in oven and bake for about 28-30 minutes, or until golden brown.
    • Remove from oven and serve!!

Individual Spinach Souffles




1-1/2 Tbsp.  Butter, plus more for pans
1/3 cup grated parmesan, divided
1-1/2 Tbsp. Flour
2/3 cup Milk
1/2 lb fresh spinach, blanched, drained and chopped
Salt and pepper to taste
1 Rbsp. Lemon juice
1/4 tsp. Nutmeg
6 eggs, separated, discarding 1 yolk or reusing for a different dish
1/2 cup cheddar cheese

Preheat oven to 375 degrees. Generously butter a muffin tin or 6 4-oz ramekins. Sprinkle parmesan into the bottom of each. In a saucepan, melt rhe butter. Add the flour and stir th make a roux. Cook, stirring constantly, for 2 minutes. Stir in milk and cook for 1 minute. Turn off heat and stir in salt, pepper, lemon juice, nutmeg and spinach. Stir in the egg yolks and cheese into the hit mixture. In a mixing bowl, beat the egg whites with a pinch of salt until stiff peak. Fold the egg whites into the spinach mixture. Divide the mixture between the ramekins it muffin pans and bake for 20 minutes. Makes 6 servings. (Ramekins)

Note** I use Pam spray for my muffin tins. I also plan to try freezing 1 to see how well they freeze and thaw and taste after. Also plan to try with other ingredients to. I will update afterwards.

 Beef Soup Bone Vegetable Stew Recipe


Ingredients:

2-3 lbs beef soup bones

1 tbsp apple cider vinegar

6 cups water

2 tbsp olive oil or other cooking fat

4 cloves garlic, minced

1 onion, diced

1.5 lbs potatoes, chopped

4 carrots, diced

1 cup tomato sauce

2 tbsp Worcestershire sauce

1 tsp fish sauce (optional)

2 bay leaves

1 tbsp salt

1 tsp pepper

3 tbsp tapioca or arrowroot starch (or other thickener) dissolved in 2-3 tbsp water


Directions:

1. Heat pan over medium to high heat and sauté garlic and onion in olive oil or other fat until fragrant.

2. Then, add beef soup bones to pan and sear on both sides.

3. Place soup bones, onion, and garlic in slow cooker and cover with water and 1 tbsp of apple cider vinegar.

4. Add the rest of the ingredients to slow cooker besides the tapioca starch or other thickener.

5. Slow cook for 8 hours on low or 200°F.

6. After cooked, remove bay leaves and bones from the stew.

7. Dissolve tapioca starch or other thickener in water and stir into hot stew pot.


Serve and Enjoy!


Lemon Blueberry Dutch Pancake

 



Lemon Blueberry Dutch Pancake

Ingredients

4 eggs

1/2 cup milk

1/2 cup flour

1 tsp vanilla

1/4 sp salt

3 TBSP sugar

2 TBSP meltedf butter

Zest of lemon


Place all ingredients in a blender. Blend until smooth. Melt 2 TBSP of butter in an oven safe skillet over medium high heat. Add 1 cup of blueberriesthen immediately add the batter and transfer to a 450 degree oven for 15 minuters. It will puff up in the oven but will collapse as it cools. To serve dust with powdered sugar if you wish an drizzle with maple syrup.

Notes; I used a hand mixer the 2nd time I made and turned out just fine. I also used lemon juice instead of lemon zest. You can use different fruit with this but if lemon don't with it omit it.
