Slow-Cooker Cranberry-Orange Pork Roast

Slow-Cooker Cranberry-Orange Pork Roast
2 tbsp. oil
1 flat boneless pork loin roast (4 lb.)

1 can (14 oz) whole berry cranberry sauce
1/2 cup Kraft Classic Catalina Dressing
1 tbsp. less-sodium soy sauce
1 tbsp. cornstarch
1 tsp. zest and 1/4 cup juice from 1 orange
Heat oil in large skillet on medium-high heat. Add meat; cook 4 to 5 on each side or until browned on both sides. Transfer meat to slow cooker.
Mix cranberry sauce, dressing and sauce; pour over meat. Cover with lid.
Cook on low 4 to 5 hours. Remove meat from slow cooker, reserving liquid in slow cooker. Cover meat to keep warm. Whisk remaining ingredients in small bowl until blended; stir into liquid in slow cooker. Cook, covered, on high 10 minutes or until thickened.
Slice meat; place on platter. Drizzle lightly with sauce. Serve with remaining sauce.

Homemade Hummus

Ingredients
15.5 oz. chickpeas, cooked, organic
0.33 c. olives, Spanish manzanilla, pitted, organic
1 tsp. garlic cloves, fresh, organic
3 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
2 tbs. lemon juice, pure, organic
1.5 tsp. basil, fresh, organic
1 tsp. cilantro, bunch, fresh, organic
sea salt, unrefined, & fresh ground pepper, organic to taste

Drain chickpeas and place in the bowl of a blender or food processor. Add olives and minced garlic, and begin processing. Pour in olive oil and lemon juice; season with basil, cilantro, salt, and pepper. Cover and puree until smooth. Hummus can be served immediately, or covered, and stored in the refrigerator until ready to use. Total recipes makes 260 grams or a little over 9 ounces. At 4 servings, each serving is about 65 grams per serving or about 2.3 ounces. You can also add a little bit of the chickpea liquid from the can to make it creamier.

Grilled Blue Cheese Coleslaw

Grilled Blue Cheese Coleslaw
8 green onions, tops trimmed
1 large head cabbage, tough outer leaves removed, cut into 8 wedges
vegetable oil
8 ounces blue cheese, crumbled
2 garlic cloves, minced
3⁄4 cup vegetable oil
1⁄3 cup cider vinegar
1 teaspoon celery seed
1 teaspoon kosher salt or 1 teaspoon sea salt
1⁄2 teaspoon fresh ground black pepper
1⁄4 teaspoon dry mustard

Directions
Prepare a hot fire in your grill. Brush green onions and cut sides of cabbage with oil. Grill for 2 to 3 minutes per side, turning once, until vegetables have good grill marks on both sides. Finely chop cabbage, coarsely chop green onions and combine in a large bowl. Let cool, then stir in blue cheese. In another bowl, whisk together garlic, 3/4 cup oil, vinegar, celery seeds, salt, pepper and mustard. Pour over cabbage mixture and toss to coat.
Tip: Place the onions perpendicular to the grill grates so they don’t fall through.

Baked eggs with Taleggio

Baked eggs with Taleggio

4 tsp unsalted butter
8 tbsp heavy cream
4 oz Taleggio cheese, sliced into 4 equal pieces
8 large eggs
4 tsp finely chopped fresh thyme
Kosher salt and cracked black pepper


Preheat the oven to 375 degrees. Grease four 1-cup ramekins with 1/2 tsp butter each. Bring a small pot of water to boil, and reduce the heat to a simmer.
Pour 1 tbsp of the cream into each ramekin. Cut each slice of the Taleggio in half and put 2 pieces on top of the cream in each ramekin. Plop 2 eggs into each ramekin. Top with the chopped thyme. Top each dish with the remaining cream and 1/2 tsp of butter.
Place the ramekins into a baking dish. Pour the simmering hot water into the dish, enough to fill the dish up the sides of the ramekins. Bake the eggs in the oven until the eggs are ooked and jiggle just a bit, 7-10 minutes. There should be no hint of uncoagulated egg. (Ask your guests how they like their eggs.) Season with salt and pepper and serve.

Beet and Carrot Boats

Beet and Carrot Boats

1 medium carrot
1 medium beet
4 heads Belgian endive

3 tbsp mayonnaise


Scrub the carrot, then grate it finely, using either a box grater or a Microplane. Set aside in a small bowl.
Wash your utensils and then peel and grate the beet. (These steps can be done ahead of time; if so, cover
the beets and carrots and tore in the refrigerator.) Slice off the bottom quarter-inch of each Belgian endive head
to free one or two leaves. Gently remove them and set them aside. Slice off the next quarter-inch to free the next
leaves, then repeat to free some more. When you're done, spread out all the leaves and choose a dozen or more
of the nicest ones of a uniform size. (Save the rest, along with the unsliced hearts of the heads, to add crispness
to tossed salads.) Spread a thin layer of mayonnaise inside each leaf, then load half the boats with carrots and
half with beets. Arrange on a plate or platter and serve chilled or at room temperature.

1 4 pack of biscuits
Shredded cheese, (I used colby cheese)
BBQ Pulled Pork (I used leftovers)

Parmesan cheese
Herbs of provence


Preheat oven to 350 degrees.
Roll out the biscuits then fill with pulled pork and cheese. Then gather the edges up and smash together to close the biscuit up. Then light brush top with olive oil and sprinkle on the parmesan and herbs of provence and bake for 7 to 10 minutes.

Homemade Grape Juice

Homemade Grape Juice
for canning

Grape Juice (Quarts)
Ingredients per quart jar:
1/3 c. sugar
1 1/3 c. grapes (I like Scuppernongs)
boiling water

Wash the grapes well. Using a funnel and ladle, pour sugar and whole grapes into hot jars. Fill jars with boiling water to 1/2 in. headspace, then cover with lids and rings. Pressure can jars for 10 min. at 5 lbs. Allow to cool overnight before testing the seals on the lids. If any didn’t seal, refrigerate immediately.
The pressure from the canner causes the juice to squeeze out of the grapes and fill the jar. Most of the grape skins will fall to the bottom of the jar eventually, although it’s okay if some still float, they are easily strained out. A layer of sugar may harden at the bottom of each of the jars, but this will dissolve over time.
My only other advice: make more than you think you’ll need; it goes fast!

Ingredients
Flaming hot Cheeto's
Panko crumbs
String cheese
Egg
Flour

Preheat fryer to 350 degree.
Ground up cheetos and mix with panko crumbs. Cut string cheese in half. Roll cheese in flour, then in egg, then in the cheeto mix. Drop in the fryer for a minute or two then remove. Just when you go to seeing cheese melting remove.
Dip in marinara sauce or plain.
Note** You can dip them in egg and cheeto mix for extra crunchy stick. Very good.

2 Eggs
1 cup Corn syrup
1 tsp vanilla extract

In a bowl combine the egg whites, corn syrup, and vanilla beat on high speed of an electric mixer for about 6 to 7 minutes. The longer you beat it the stiffer it gets. So if you like a stiff frosting continue beating a little longer.

Ingredients:
½ cup of milk (whole-fat)
3 tablespoons of all-purpose flour
1 teaspoon of vanilla essence (or extract)
2 tablespoons of granulated sugar
1 tablespoon of Nutella
½ cup of unsalted butter
What to do:

Take a nonstick saucepan and add to this the flour and milk, making sure the pan is sufficiently hot (keep the flame on medium-low the whole time). Use a wooden spoon or a whisk to stir the flour into the milk, making sure to do this without a break until it turns thick and reduces in quantity in the pan. Make sure that the mix has the consistency of paste - take it off the heat and empty its contents into a bowl. Pop it into the freezer so that it chills faster. The next step is to coalesce the granulated sugar and Nutella with the butter, beating the two together until fluffy (2 minutes). You can then take the mix from the freezer, making sure it isn't hot or warm, but completely cool. Using a whisk or an electric one (with a whisk attached), combine the two mixes and wait for it to look like whipped cream (close to 10 minutes). In other words, when you lift the whisk from the mixture, the swirly tip of the icing should peak stiffly.

In a medium bowl, mash together the potato reserves with a dollop of sour cream and salt and pepper, to taste. Place mixture back into hollow potato and top with a spoonful of pizza sauce, shredded cheese and pepperoni. Place back in the oven until the cheese melts. Top with all your favorite fixings like green peppers, black olives and onions.

Chicken Potato Pie
Who doesn't love the comforting taste of chicken pot pie? Now imagine that creamy filling oozing out of the warm baked potato. While your potato is baking whip up just the filling portion of your favorite pot pie using the reserve potatoes. Pour filling in the sprinkle with breadcrumbs.

Pastrami-Potato Sammie
Start spreading the news, this spin on a New York deli classic is delicious. Pan fry your pastrami and potato reserves in beef broth. Pack the pastrami and reserves into the potato and place Havarti cheese overtop. Let the cheese melt then top with mustard and pickle relish.

Ham & Swiss Spud
Saute diced ham, onion, celery and potato reserves in oil until vegetables are tender. In a small bowl, whisk together Dijon mustard, mayo and honey, to taste. Spoon ham-potato mixture into the potato shell. Top with shredded Swiss cheese and a drizzle of the sauce.

My dogs love these and they are so easy to make.

No Bake Dog Treat (balls)

3/4 cup Peanut butter (all natural is best)

1/4 tsp. cinnamon
1/4 cup water
1-1/4 cup oats



Line cookie sheet with parchment paper. In bowl mix together peanut butter, cinnamon and water until combined. Slowly add the oats 1/4 cup at a time until completely mixed in. Scoop by the spoonful onto sheet. Chill in fridge for 1 to 3 hours before feeding dog. To freeze place in ziplock bag and freeze. Get out as you need.
Note** When I made these the first time 1/4 cup of water was not enough for the whole all the oats. So I just added little more water until I had a dough. Not a sticky dough.

Ingredients
- 3 Cups Oat Flour
- 1 Cup Coconut Flour

- 2 Eggs
- 1 Cup Water
- 1 Cup Finely Chopped Fresh Parsley
- 1 Cup Finely Chopped Fresh Mint
- 1/4 Cup Coconut Oil


Instructions
Line (2) baking sheets with parchment paper
Preheat oven to 350º
Combine oat flour and coconut flour in a large bowl.
Add finely chopped parsley and finely chopped mint.
Add coconut oil, cup of water, and 2 beaten eggs.
Combine all the ingredients together.
Knead with your hands until you are able to shape into a solid dough ball. If it is too crumbly, add a tiny bit of water ...1 tablespoon at a time.
Roll the dough ball out to approximately 1/4".
Use a cookie cutter to cut out your shapes.
Place onto your lined baking sheet
Bake at 350º for 20-25 minutes.
Turn off oven and let them cool in the oven so they continue to dry out.
Store in airtight container in refrigerator for up to two weeks or in freezer up to 3 months.

Notes
Do not use stems from the parsley or mint. Only the leafy parts.
If you want the parsley and mint a little finer, you can place it into a food processor and pulse it a few times. I personally like to chop it and then pulse it, but it is totally just my preference.

Pimento Cheese Mac and Cheese

Pimento Cheese Mac and Cheese

For the topping:

4 TBSP salted butter (I used Plugra)
1 clove of garlic, minced
3 slices of French Bread (about ¾-1 inch thick), cubed

For the mac and cheese:
12 oz cooked pasta
8 ounces cream cheese, at room temperature
½ cup mayonnaise
2 cups sharp cheddar cheese
¼ tsp. garlic powder
¼ tsp. onion powder
1 (4 oz.) jar pimentos, drained
2 ¼ cups heavy cream
½ cup whole milk
5 TBSP all-purpose flour
4 TBSP unsalted butter (I used Plugra)
Salt and pepper to taste


For the topping:
Preheat oven to 350 degrees F.
In a large sauté pan, melt butter over medium heat.
Stir in garlic; cook and stir for 1 minute.
Add bread cubes, and toss to coat.
Spread on a baking sheet.
Bake for 15 minutes or until crisp and dry. Check frequently to prevent burning.
Let cool to room temperature and then place them in a plastic sealed bag and using a rolling pin turn the croutons into crumbs.
Set aside.
For the mac and cheese:
Preheat oven to 375F.
Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, onion powder, and pimento into the large bowl of a stand mixer.
Using paddle attachment beat the mixture on medium speed until thoroughly combined.
Set aside.
Melt butter in large saucepan.
Once melted add flour and create a light colored roux.
Add the cream and milk and whisk to let the roux dissolve.
Add the pimento cheese spread and whisk until the cheese melts completely.
Season to taste with salt and black pepper.
Add pasta to the pimento cheese sauce.
Pour into a buttered dish I used a smaller one for photos and then a 7-x-11-inch pan so a 9-13-inch pan should work just fine for this.
Top with the garlic butter croutons.
Bake for 20-25 minutes or until top is crispy and cheese is bubbling. If crouton topping is getting too crispy too fast, cover with foil.

Granola Bars



Granola Bars


2 cups Rolled Oats
3/4 cup light brown sugar
1/2 cup wheat germ (I used ground flaxseed)
3/4 tsp cinnamon
1 cup all purpose flour (I used gluten free)
3/4 cup raisins, (I used dried cranberries)
3/4 tsp salt
1/2 cup honey (I used vanilla agave)
1 egg, beaten
1/2 cup vegetable oil (I used Olive Oil)
2 tsp Vanilla


1. Preheat oven to 350 degrees. Grease baking dish with cooking spray. (I used parchment paper).
2. In a bowl, add in the rolled oats, light brown sugar, wheat germ, powdered cinnamon, all purpose flour, raisins and a dash of salt. Mix well.
3. Add in the honey, beaten egg, vegetable oil and vanilla. Stir and mix well.
4. Press the mix into the baking dish.
5. Place in oven and bake for 30 to 35 minutes or until golden around the edges.
6. Remove and cool 5 minutes.
7. Slice into bars and serve.
Note.. I also used about 1/2 cup of a trail mix. (Hunter Brand from Sams) I let mine cool a little long then 5 minutes before slicing. Once they are cooled i wrapped them individually in freezer paper. Or you can use anything you like. Stored in a rubbermaid container.

Cauliflower Parmesan Crisps

Cauliflower Parmesan Crisps

Ingredients
• 3 lb head of cauliflower 1 average head of cauliflower
• 3/4 cup fresh grated Parmesan cheese
• 1 tsp garlic powder
• 1 tbsp dry parsley
• salt optional
Instructions
1.Cut cauliflower florets off the stem.
2.Steam cauliflower florets until tender. (10-15 minutes)
3.Place steamed cauliflower florets in a food processor and pulse a few times until it looks like fine crumbs. (Make sure there are no chunks left.)
4.Transfer cauliflower crumbs in a doubled cheese cloth and squeeze out all the liquid. (You may have to let it cool a bit or it will be too hot for you to squeeze.)
5.Place cauliflower in a mixing bowl and add Parmesan cheese, dry parsley, and garlic powder. Mix well, until all evenly incorporated. (Taste to see if you want to add salt. Parmesan cheese is quite salty and you may feel like it's enough salt.)
6.Preheat the oven to 425 and line a large baking sheet with parchment paper.
7.Use a cookie scoop to scoop out cauliflower "dough." Press it into a ball with your hands and place it on the baking sheet. (I used #40 scoop.)
8.Press down to flatten the "dough" into a thin disk, fixing the broken edges. The goal is for the disks to be only about 3 millimeters thin.
9.Repeat with all the "dough." You will get about 12 pieces.
10.Bake for 15-17 minutes, until deep golden brown.
11.Let the cauliflower crisps cool before taking them off the baking sheet. Use a spatula to gently scoop them up.

MAKE AHEAD REFRIGERATOR ROLLS

2 pkg. active dry yeast
1/2 cup lukewarm water
1/2 cup sugar
1 1/2 cups milk
2 1/2 teaspoons salt
2 eggs
6 1/2 cups all purpose flour
1/4 cup vegetable or light olive oil
1/4 cup butter


Preparing the dough:
In a cup, dissolve yeast in water with a teaspoon of the sugar; stir well. Allow mixture to sit for 10 minutes.
Meanwhile, in a medium saucepan, heat milk until tiny bubbles form along the edges of the pan. Add butter. Remove from heat and allow butter to melt. Pour scalded milk into a bowl and combine with remaining sugar. Allow to cool until lukewarm, then add yeast mixture.

Add eggs and beat on medium speed of electric mixer until eggs are foamy. Stir in 3 cups of the flour and the oil.
Add salt and all but 1/4 cup of the remaining flour; beat with dough hook attachment until smooth (or see below and knead dough by hand).
Sprinkle a dusting of flour on a clean work surface (a silicone mat or a wooden pastry board are handy baking tools to have on hand). Knead until smooth (about 8-10 minutes by hand, or if kneading by machine, 4-5 minutes).
Turn dough out onto work surface; sprinkle with part of the remaining 1/4 cup flour and cover with plastic wrap (or an overturned bowl) to keep from drying out. Allow to rest for 10-15 minutes. Knead by hand for several minutes until dough is smooth and elastic. Add remaining flour if needed, but try not to use too much, as too much flour will make the rolls heavy.
Roll the dough into a rectangle, about 12x8 inches. Brush the dough lightly with oil and place in a plastic bag. Store in refrigerator until ready to use.
Baking the Rolls:
When ready to make rolls, cut off amount of dough needed and return remaining dough to refrigerator for later use, if desired.
Take the dough to be used for baking and form a ball. Brush the inside of a bowl lightly with oil and turn the ball of dough several times in the bowl to coat all around. Cover the bowl with a clean damp towel or plastic wrap and allow the dough to rise in a warm place, free from draft, until doubled in bulk (about 60-90 minutes, depending on room temperature).

Lightly spray or brush a baking pan with olive oil. Shape the dough into rolls in any desired shape and place on pan. To have "break-apart" rolls with lighter, softer edges, place rolls closer together. The dough will spread as it rises so that the rolls will touch but can be easily torn apart. For crisper, more browned and individual rolls, place them further apart by at least 1 1/2".
Allow formed rolls to rise in a warm place, free from drafts until doubled in bulk (about 45 minutes for smaller rolls). Brush rolls with cream or an egg wash (beaten egg mixed with water), if a sheen is desired.
Preheat oven to 375°F 15 minutes before baking. Bake for approximately 12 minutes or until rolls are golden brown and light (bigger rolls will take longer to bake).
Remove from oven and brush with melted butter for softer rolls. The rolls may be sprinkled with cinnamon sugar, crushed walnuts, and drizzled with confectioners' icing or served as is.
Variations:
This is a versatile dough which can be used to make many different kinds of rolls in various shapes and sizes and unlimited toppings and fillings.
To make crescents, roll the dough into a rectangle and cut out 4 inch triangles. Sprinkle the surface with cinnamon sugar mixed with butter and flour; spread over the surface and roll the triangles up into crescents, curving in the ends. Or roll the dough (sprinkled with cinnamon sugar and/or chopped nuts) into logs, slice into short lengths and form spirals or pinwheels. Brush with butter, dust with cinnamon sugar and bake. Drizzle with confectioners' icing while still warm from oven.

To make confectioners' icing, add a tablespoon or so of water and a few drops of vanilla to 1/2 cup confectioners' sugar, adding more or less until mixture is of a drizzling consistency.
Marshmallow Cinnamon Surprises:
Roll the dough thinly and cut into 4 inch circles. (Scraps may be re-rolled.) Make a mixture of 1/2 cup sugar, 2 teaspoons cinnamon, and 1 tablespoon flour (mix well). Variation: Add 3 tablespoons finely chopped nuts.
Dip a marshmallow into milk and roll in the cinnamon sugar mixture to coat well.

Place the circle of dough into a greased muffin cup with the marshmallow in the center of the dough. Pinch the dough around the marshmallow to enclose it completely, then turn the roll around so that the seam is on the bottom. Let rise until doubled. Spray or brush top of roll lightly with butter or olive oil spray. Bake at 350°F until lightly golden on top.
Substitution Notes:
1/2 cup vegetable oil may be substituted for 1/4 cup butter and 1/4 cup oil; but the butter adds a richer flavor.
1/2 cup of buttermilk may be substituted for 1/2 cup of the milk; this will make for lighter and more delicate rolls and an easier handling dough.

For richer rolls with extra nutrition, 2 eggs may be substituted for 1/2 cup of the milk. Rolls will brown more quickly.
To make plain dinner rolls, decrease 1/2 cup sugar to 1/3 cup. Brush with egg wash and sprinkle with sesame or poppy seeds, if desired. For herbed dinner rolls, add 2 tablespoons finely minced herbs; sprinkle with chopped onions. For cheese dinner rolls, add 1/3 cup grated Parmesan or Cheddar.

SLOW COOKER SWEET AND SOUR PORK

2-3 pounds cubed pork
3 tablespoons soy sauce
1/4 cup rice wine or cider vinegar
1 large onion, sliced
2 tomatoes, cut into slices
2 tablespoons cornstarch
3 cloves garlic, minced
2 tablespoons water or apple juice
1 1/2-inch square cube ginger, freshly grated
1/4 cup brown sugar
2 green peppers, cored and cut into quarters


Spray crockpot liner with olive oil spray. Combine soy sauce, water, and cornstarch with brown sugar. Put washed and dried pork into crockpot and stir in remaining ingredients except green pepper and tomatoes.
Cook on low for 8 hours. Stir in green pepper and tomatoes.

Cook on high for an additional 10 minutes.
Serve on a bed of rice.
Variations: To make polynesian pork, eliminate tomatoes and stir in cubes of pineapple and cashews during the final hour; add sweet chili paste to taste, if desired.

CROCK POT BEEF STEW

CROCK POT BEEF STEW

3 lbs. stewing beef, cut into 1-inch cubes
1 3x2-inch cube lean salt pork (optional)
1 tablespoon extra virgin olive oil
2 large onions, sliced
1/2 lb. large carrots, cut into 1/2-inch thick coins
3 large potatoes, in 1-inch cubes
4 garlic cloves, minced
salt and pepper, to taste
2 tablespoons flour (or enough to coat meat)
garlic and onion powder (for sprinkling)
1 quart beef stock
water
1/4 cup ketchup

This Beef Stew may be made in the Crock-Pot or on the stove top in a large Dutch oven, but for the best results, be sure your Crock-Pot doesn't boil; it should simmer lightly. Boiling will make the beef stringy and dry, will ruin the flavor of the broth and make the vegetables mushy - the results will be like stew from a can. Some Crock-Pots have probes which will allow you to set the desired temperature.

Sprinkle the beef cubes lightly with salt, pepper, garlic powder, onion powder and flour for extra flavor during browning.
When using a Crock-Pot for beef stew, for extra flavor, brown the floured beef cubes in olive oil before transferring them to the Crock-Pot (brown the salt pork along with the beef, if using). Brown onions and add garlic towards the end of the browning but don't allow it to take on too much color. In a Crock-pot, add all the vegetables at the beginning; set the Crock-Pot to 170-190°F and leave to cook from 5-8 hours or until meat and vegetables are tender.

If using a Dutch oven, add the vegetables during the last 35 minutes of cooking and simmer until tender. Add a few tablespoons of flour at the same time to thicken the gravy, if desired. The gravy may also be thickened by stirring a a tablespoon or so of cornstarch into cold water before adding to the stew. Be sure to allow ample time for the thickener to cook before serving time to avoid a raw flour taste.

Extra vegetables can be added if you have them on hand. Turnips, corn, sweet potatoes, fresh peas and green beans are all wonderful additions. A pinch of thyme and basil and bay leaf can be added, too.

This stew tastes even better the following day after the flavors have a chance to blend in the refrigerator!

CROCK POT MACARONI AND CHEESE

8 oz. macaroni
3 c. sharp grated cheese
2 eggs
1 large can Carnation evaporated milk (not condensed milk)
1 1/2 c. regular milk
1 stick butter, melted

Cook macaroni and drain. Add cheese, pour in crock pot (sprayed with PAM or oil). Add butter. Beat eggs and mix with both milks; add to macaroni mixture. Mix and cook on low for 3 to 4 hours.
Note: To make more, use 16 oz. macaroni and add some extra milk.

Ingredients:

1 cup mashed sweet potato (remove the skin & steam it until soft)1/2 cup creamy almond butter2 tbsp maple syrup1 tsp vanilla extract2 tbsp cacao powder2 tbsp Carrington Farms organic flax chia blend1/8 tsp sea salt1/4 cup carob chipsToppings: carob chips, flax chia blend sprinkle, more creamy nut butter

Directions:
Preheat oven to 400F.In a medium bowl, mix together mashed sweet potato, creamy almond butter, maple syrup and vanilla extract.Add in cacao powder, flax chia blend and sea salt.Gently fold in carob chips with a spatula.Pour into a 8 x 8 baking pan lined with parchment paper.Top with more carob chips and crumbled chocolate bits.Bake for 10 minutes.Let it cool. FLAX-HEMP BANANA BREAD
Ingredients
2 ripe bananas
1 egg
1 Tbsp vanilla extract
1 Tbsp Carrington Farms coconut oil
2/3 coconut milk
1 cup almond flour
1 cup Carrington Farms flax-hemp
1 Tbsp baking powder
2 Tbsp stevia
1/2 tsp salt


Directions
Preheat oven to 350 degrees. Line a small loaf pan with parchment paper or spray with Carrington Farms nonstick cooking spray.
In a small bowl, mash the bananas well. Add the egg, vanilla extract, coconut oil and milk. Whisk until all ingredients are well-incorporated.
In a medium bowl, add all of the dry ingredients and mix with a fork to ensure they are well-combined.
Slowly and while whisking, add the dry ingredients to the banana mixture. The “batter” should be a little lumpy and not too wet. If it appears to be too dry, just add more coconut milk.
Pour the mixture into the loaf pan, patting it neatly into place. Bake at 350 degrees for about 45 minutes. Since ovens vary, start checking the bread at the 35 minute mark. Allow it to cool on rack before serving.

STRAWBERRY FLAX CHIA BLEND PUDDING

Ingredients:
2 tbsp Carrington Farms Flax Chia blend
1/2 cup almond milk
1 cup chopped strawberries

Directions:
Stir Flax Chia blend and almond milk in a glass container and let chill in fridge for at least two hours. When set, layer strawberries and pudding in a small glass or jar as pictured. Enjoy!

Blueberry Banana Overnight Oatmeal

Blueberry Banana Overnight Oatmeal

1/2 cup rolled oats (I used GF oats)

1 mashed banana
2 TB Chia Seeds
1 tsp vanilla
1/4 tsp Cinnamon
2 TB Honey
3/4 to 1 cup of Milk (use any you like)
1/2 cup blueberries


Stir all ingredients together and half between 2 mason jars. Place in the fridge overnight. You can eat as is or you can microwave it for 1 to 2 minutes depending on how hot you want your oatmeal. Add more fruit if you like.
Note I added about 1 TB of sugar to mine to make it a little more sweeter. You can also use maple syrup in place of honey if you like.

Cinnamon Ornament Recipe

Cinnamon Ornament Recipe

1 cup of flour
1/2 cup of salt
1/2 cup of cinnamon
3/4 cup of very warm water
Other Materials Needed
Cookie cutters
Wax paper
Acrylic paints (optional)

Method
Combine the dry ingredients in a large mixing bowl.
Then, add 3/4 cup of very warm water and mix well. 
Once combined remove the dough from the bowl, and knead it with clean, dry hands.  
If the dough is at all sticky dust your hands with flour and knead it into the dough. 
After a bit of mixing & kneading you will be left with amazing cinnamon ornament dough!
Give kids cookie cutters and rolling pins, and they will have a blast making their very own cinnamon ornaments.

I recommend rolling the cinnamon dough out on wax paper to prevent sticking.
Be sure to pierce a hole in the ornaments before leaving them to dry.  This makes stringing them onto the tree much easier!  To do this we used a toothpick.
It will take roughly 24 hours for the ornaments to dry.  
We made two batches of this easy ornament clay, and that allowed us to make roughly 20 ornaments.  We hung some of them without painting them but most were painted by Rosie and Jewel the next day.

PRO TIPS:  
If kids are painting the ornaments you can add a touch of cinnamon to the paints to make the ornaments extra fragrant.
I recommend using acrylic paint.  
If you are not painting the ornaments you can spray them with a clear finishing spray or use Mod Podge to return them to a deep brown color before hanging them on the tree.
